Merdeka Ice Lollies

Get your patriotic spirits on with these ice lollies made in the colours of our Jalur Gemilang.

Due to our hot and humid climate, icy desserts have always been some of the treats we enjoyed growing up. Who can resist red bean aiskrim potong and asam boi aiskrim Malaysia on a hot sunny day? So, in conjunction with the 55th year of our independence, we came up with ice lollies inspired by the red, white, blue and yellow of our beloved Jalur Gemilang 'cause you know we're cool like that.

Red - Rose Syrup and Basil Seeds



We got the idea to make this from the ais tingkap ( window sherbet ) stall in Penang. We mixed in basil seeds to give it some texture and added ice cream soda for some fizz. Sweet and syrupy, this is a typical drink combo that you can usually find at weddings and festive gatherings.

Ingredients



1 Tsp Gelatin Powder, clear
½ Cup Water
1 Tbs Rose Syrup
1 Tbs Basil Seeds ( Biji Selasih )
1 Can Ice Cream Soda

Method

In a pot, mix water and gelatin together and let it cook for about 1 minute. Switch off flame.
Add basil seeds. Leave it for a few minutes. Pour in ice cream soda and rose syrup. Mix well.
Pour into plastic cups, let the mixture cool for 10 minutes and then put it in the freezer. After an hour, dip the ice cream stick in the cup and let it set overnight.

White - Coconut Shake



From the north, we ventured down to the south to Melaka, all the way to the beaches of Klebang where the famous coconut shake stall is located. Drawing inspiration from this famous drink, we mixed creamy vanilla ice cream with coconut water to make this rich icy dessert. Bits of coconut flesh in the lollies give a nice textural surprise to your tongue in every lick.

Ingredients




500 ml Coconut Water with Flesh
3 Scoops Vanilla Ice Cream
½ tsp Vanilla Essence

Method

Blend all the ingredients. Pour into plastic cups, let it cool for 10 minutes and then put it in the freezer. After an hour, dip the ice cream stick in the cup and let it set overnight.

Blue - Blueberry and Rambutan

Ok, ok, we had to resort to a non-Malaysian ingredient, blueberries to get the blue hue of this lolly. Hey, it's for independence so grant us some creative freedom, aight? Luckily, not only do the berries give a nice dark blue colour, they also add a wonderful tanginess to the juicy rambutans. With each icy mouthful, you'll get the sweet flesh of the rambutans and a nice sour hit from the blueberries.

Ingredients




1 Cup Frozen Blueberry
1 Cup Canned Rambutans, with syrup
½ Cup Water
2 Tbs Brown Sugar


Method


In a pot cook all the ingredients until the berries soften and the liquid thickens.
Pour into plastic cups, let it cool for 10 minutes and put it in the freezer. After an hour, dip the ice cream stick in the cup and let it set overnight.


Yellow - Sweet Corn and Coconut



Of course, a classic flavour - sweetcorn! We didn't blend the kernels so you can see gorgeous yellow nuggets of corn in the lollies. Deliciously creamy and rich, the mixture of corn and coconut makes this a perfect cooling treat to ward off the heat on a sunny day. The addition of salt helps to intensify the sweetness of the corn.

Ingredients



1 Can Sweet Corn in Water
1 Cup Coconut Milk
4 tsp Brown Sugar
A little bit of salt for seasoning

Method

In a pot, cook the corn for 5 minutes.
Add in brown sugar and coconut milk. Mix well. Season with salt.
Switch off flame.
Pour into plastic cups, let it cool for 10 minutes and put it in the freezer.
After an hour, dip the ice cream stick in the cup and let it set overnight.
