Every day we face the daily mundane #firstworldproblems at work which is – What’s for lunch? Unless you are working in a new area, you are pretty much sick and tired of the same old lunch selection provided by your office canteen or restaurants surrounding your office perimeter. You and you colleagues probably make the effort to drive out further to find a different choice of meal, which adds up to the cost of travelling, parking and time. Before you know it, your 1 hour lunch break is over pretty fast.
If you calculate your weekly lunch expenses, you’d be surprise it adds up. That does not even include the morning coffees, brunch snacks and tea time treats. Why not try something new? Pack a home-cooked meal for lunch for a change. Before you start thinking ‘I’m not going to wake up early just to cook my lunch!’ – fret not.. The lunch ideas we going to share with you can be prepared the night before and heated up at work. It will still be just as good, just as fresh. Best of all, portions are enough for 3-4 people so you can pack them for your family or bring extras for your mates at work.
The groceries we bought for these 5 lunch ideas were from Jaya Grocer supermarket. Pantry staples like oil, salt, pepper, eggs, garlic, onion, ginger and some basic sauces are not included in the list.
Monday – Monday doesn’t need to be blue. Let it be green like this lush Pea, Potato & Bacon Soup. It takes no more than half an hour to whip up and gosh it tastes really good! Cool it and pack it for your next day lunch. It even tastes way better the next day.
Tuesday – This Chicken & Straw Mushroom Stir Fry is super tasty and packs full of flavor. The recipes uses everyday pantry staples which you probably already have in your kitchen.
Wednesday – Give yourselves a pat on the back, it is already half way through the week. Treat yourselves with this hearty Awesome Chicken Sandwich. It goes really well with sweet potato fries or potato chips. You can build the sandwich the night before and cling wrap it tightly, or you can build the sandwich at the office.
Thursday – Time to spice up your meal with this fried Tom Yum Mee Hoon recipe. It is so addictive I would bring seconds just in case my pesky colleague wants a bite. Best eaten with fish or prawn crackers.
Friday – Light at the end of the tunnel! It’s Friday! You can enjoy this Tuna & Sweetcorn Patties with a bowl of fresh salad and a light vinaigrette dressing. It doesn’t look much but this meal will keep you full for the day.
