I hope that survey will really help those fellas. I kinda find the survey not so 'smart'. It asks what we 'think' makes italian dishes popular in Malaysia...... Not sure if such question will provide any insight to anyone or not.

Interestingly, the survey ends in an abrupt way. Where is the 'next page'?

The critical success factors will depend on knowledge (limited) of Italian cuisine and the 'halal' issue. On the knowledge part, many people have the perception that Italian cuisine is all about pasta and pizzas when in actual fact there are so many regional variations and different levels of sophistication. After all it was an Italian that revolutionized French cooking when Catherina de Medici married King Henry of France. Her chefs introduced Duck ala Orange, sorbets and many fruits including figs,melons, apricots and the Savoy cabbage. The French table setting changed with Catherine's influence with the introduction of the fork and crystalware!!!!
On the halal front we have two extremes- on one hand you have a section of non Muslims who seem to crave pork and any western restaurant that serves pork is automatically popular even if the food is below par. The other extreme are those who are fastidious about 'halal' certification and therefore will generally only dine in hotels with this certification. So for certain groups it is not just a taste and quality factor but finding the right combination of the perceived lowest common denominators.

In cooking, substitute ingredient is most likely inferior and don’t give the authentic taste and smell (e.g. butter vs margarine, olive oil vs palm oil, cocoa butter vs palm oil fat, etc) and omitting principal ingredient (e.g. wine) is incomplete.

Authentic continental (e.g. French, Italian, German) cooking is non-halal. Continental restaurant that serve pork is gaining popular in KL because is authentic and likely taste better than emulate cooking e.g. chicken dish and mushroom soup cooked with bacon taste a lot better than just cooking oil.
