Can you believe it's already April? It feels as though the year has only just started! Here are some goodies that can put any busy mind at ease even if you only have a few minutes to take time out and relax...

It’s the start of April and we figured you might like some ideas for tasty treats that will reward you after a busy day. We’ve made a few things that will definitely tingle the senses and tickle the mind. Indulge in some of these goodies and have a good time!

Vietnamese Spring Roll with a Plum Dip

These are wonderful as a light and healthy treat. You don’t have to feel guilty when chomping down on a plate of these and they’re delicious which is of course an added bonus! The mint gives it a burst of flavour that works well with the plum sauce.

Raspberry Popsicle

Who wouldn’t like something that is deliciously refreshing? This would be perfect for a BBQ by the poolside. You could even make a bunch of these and keep them in your freezer for when the mood for something cooling strikes.

Coffee Ice Cream with a Chocolate Drizzle

There isn’t anyone out there who can say they don’t enjoy a comforting bowl of ice cream. This is creamy and refreshing at the same time and the chocolate drizzle and chopped nuts gives it that added indulgence. Curl up on the couch with a large bowl of this and enjoy every minute of it.

Here are the recipes for these great treats. I hope you enjoy making these as much as I enjoyed creating them.

"Recipes to tickle the senses"

Vietnamese Spring Roll with a Plum Dip
(Makes 5)

Ingredients:
1 mango, julienned
1 handful of strawberries, sliced
10 mint leaves
5 rice papers
Sauce: Combine 1 Tbs Raspberry Jam with 1 Tbs Balsamic Vinegar

Soak one rice paper in a bowl of water for about 20seconds or until it becomes soft and pliable. Place 2 mint leaves down in the centre, top with some strawberries and mango and then fold into the shape of a spring roll. Make these one at a time so that the rice papers don’t get over soaked and sticky. Serve with the sauce on the side.

Raspberry Popsicle

Ingredients:
1 small red onion, chopped
1 red bell pepper, chopped
1 cucumber, chopped
1 can chopped tomatoes in juice
3 garlic cloves, chopped
Juice of 1 fresh lime/lemon
1 Tbs tomato paste
3 Tbs balsamic vinegar
3 Tbs extra virgin olive oil
1 cup water, as needed
1 tablespoon kosher salt
½ teaspoon cayenne pepper
3 sprigs fresh oregano

In a large bowl combine the onion, bell pepper, cucumber, canned tomatoes with juice, garlic, and lime juice and stir together. Add the tomato paste, balsamic vinegar and the olive oil, and mix, making sure to dissolve the tomato paste. Add water to adjust the texture, then season with salt and cayenne pepper, adjusting to your preference. Add the sprigs of oregano and cover the bowl tightly and refrigerate overnight.

The next day blend the soup in a food processor or blender till fairly smooth. Pour into Popsicle moulds and leave to freeze completely. Enjoy!

Coffee Ice Cream with a Chocolate Drizzle

Ingredients:
1 1/2 tablespoon unflavored gelatin 

1/2 cup cold water 

1/4 cup mayonnaise 

Salt and pepper, to taste 


1/4 teaspoon cayenne 

2 teaspoons dill, chopped 
 

1 tablespoon fresh lemon juice 

2 cups canned salmon, drained
1 cup heavy cream
BBQ Sauce
Chopped Walnuts

In a large mixing bowl, dissolve the gelatin in the water. Set aside for 5 minutes. Heat the gelatin over low heat while stirring to melt the gelatin. Cool to room temperature. 
Whisk in the mayonnaise, salt, pepper, cayenne, chopped dill, and lemon juice. Refrigerate the mixture for 15 to 20 minutes or until it begins to thicken lightly. 
Blend the salmon in a food processor. Whip the cream until thick and fluffy. Fold the salmon and cream into the gelatin mixture. Refrigerate for at least an hour. Use an ice cream scoop and scoop into balls, drizzle with BBQ sauce and sprinkle on the walnuts. Enjoy with bread or crackers.
