I got this snazzy silicone mini muffin pan for Christmas and been trying to find the time to check it out. It's rubbery and fold-able hence does not take much space in your kitchen at all. The front picture of the box had a hand taking out freshly baked chocolate chip muffins. Lo and behold, the recipe is on the back of the box.

As far as recipes go, this one is pretty easy. We had everything in our pantry anyway- well we ran out of chocolate chips because someone has been snacking on it in the office. So to sub it, I chopped up some Lindt dark chocolate and stirred it in. And we ran out of self-raising flour, so I just used all purpose and added 2 tsp of baking powder. That's all you need to do, stir everything in and start filling up the silicon pan.

The muffins turned out fab! And as for the pan, though I needed to use oven mitts to take it out. Once it's on the counter, it took no time to cool down enabling you to reuse it quickly. Taking out the muffins are a breeze. Just as it says on the front, bend it and out pops a muffin.
And I must say, I've never eaten muffins this small (usually cupcakes are this size) but they are great! The recipe is spot on and it's nice and moist on the inside. The only thing about small baked goods is that it does get a little dry on the outside after a while but nothing a quick zap in the microwave won't cure. Plus, they are small so you don't feel so guilty. The recipe yielded quite a lot of these mini muffins, almost 3 dozen of them.

So hurrah for this pan- am certainly going to cook more mini things, hmm... mini cakes, mini pies, mini tarts, mini quiches and do a tea-party for gnomes/ kids or for adults who just like to pop little things in their mouth. Right, that came out wrong... but your muffins won't!

Back of Muffin Pan Box Recipe
Decadent Mini Chocolate Chip Muffins
2 cups self-raising flour
2/3 cups castor sugar
60g butter, melted
1 egg
3/4 cups milk
1 tsp vanilla essence
200g chocolate chips
Method:
Preheat oven to 180 Celsius
Lightly grease muffin pan
Sift flour and suagr into a bowl
Using spoon stir in the remaining ingredients until well combined
Spoon mixture into pan, filling cups about 3/4 of the way
Bake for 20-25 minutes or until muffins are golden
When baked let muffins stand for about 5 minutes
Pop it out and serve with a nice cup of coffee
