Have extra bread lying around and a muffin tin? This is an excellent way to make breakfast muffins without all the fuss of mixing up batter. Simply press in your bread into the tin, break an egg into it and add anything you like for a bit of meaty bite. In this case we added smoked salmon, cherry tomatoes and generous toppings of PERFECT ITALIANO Mozzarella. Bake in oven and wallah! Bread quiches- so simple to make but perfect for breakfast.
