Ayam Masak Merah is so easy to make that it has become a popular dish to cook among Malaysian students overseas. Yummy and tangy, this popular homesick remedy is simple and can be made with minimal fuss.

Ingredients
Fried chicken
Marinate
1 whole Chicken, cut into 8 pieces
1 tbsp Tumeric Powder
a pinch Salt
enough Oil, to fry
Marinate the chicken with tumeric powder and salt for about 10 to 15 mins.
Fry the chicken till it is 2/3 cook. Remove from wok and put it aside.
Sauce Blended Ingredients
10 Shallots
4 cloves Garlic
an inch Ginger
5 - 7 Dried Chillies, soaked
enough Water, to help with the blending process.
Blend everything together.
For sauteeing
2 Lemon grass, bruised
1 large Onion, cut into rings
2 Green Chillies, cut in half
1 Tomato, cut into wedges
4 tbsp Tomato sauce
2 tbsp Chilli sauce
4 tbsp Oil
Seasoning
Salt to taste
Optional
A handful of Parsley, roughly chopped
½ cup Green Peas, blanched
Serves...
4-6
A Malaysian favourite that would impress your guests!
Great when eaten with Nasi Biryani and Acar Rampai.
Method
1. Heat oil in the pan/wok. Sautee all the blended ingredients till fragrant.
2. Add in lemon grass and green chillies.
3. Then mix in tomato sauce and chilli sauce. Stir to combine them together.
4. Put in tomato wedges and onion rings. Cook the onion rings until they start to soften.
5. Finally put in fried chicken, stir and let it simmer for 10 minutes.
If you have green peas mix them in just before serving and garnish with parsley.
