Recently I've been making my own curry paste. It's cool because you can control how spicy or pungent you want it to be. This particular paste I discovered makes an awesome curry laksa too!
Heat up a little bit of oil and fry mustard, cumin and coriander seeds.
In a pestle pound garlic, ginger and grind in the fried seeds until you get a nice paste.
Add the rest of the ingredients and mix well.
You can triple or quadruple it for a big batch.
