So many wonderful things you can do with ubi kayu! This baked kuih has great aroma, taste with a light bouncy and chewy texture. So easy to make, get the kids involved too.
One of the simplest kuih to make!
Serves 8 - 10 people
How finely you grate the tapioca will influence kuih texture. Grating it finely will result in a smoother kuih.
1kg fresh tapioca
250ml coconut milk
100g butter, melted
½ tsp. salt
1 tsp. vanilla essence
1.Grate fresh tapioca with a fine grater. Transfer it into a large mixing bowl and add in sugar and coconut milk. Give it a good stir.
2.Lightly beat eggs and add in melted butter, salt and vanilla essence. Put aside 2 tablespoons of butter for later.
3.Combine tapioca and egg mixture together. Mix well.
4.Grease a 10’’ x 10’’ baking tray lined with baking parchment. Pour in tapioca mixture and spread it out evenly.
5.Bake in oven at 200°c for an hour. Brush some melted butter on the kuih half-way through and continue baking.
6.Remove from oven when the top is browned and Bingka is cooked through.
7.Cool to room temperature before cutting into squares.
