If you’re a cheese lover, you’re gonna enjoy this recipe. Simple chicken fried rice topped with melted cheese, perfect for the bujangs and students out there.
Serves 2 people
Do not over-brown garlic as it will make everything taste bitter.
3 cups cooked rice
2 tbsp. butter
1 chicken breast, sliced
Pinch of salt
3 cloves garlic, sliced
1 tomato, chopped
6 Broccoli florets, blanched (80g)
½ tsp. oregano
½ tsp. chicken seasoning
Pinch of black pepper powder
½ cup grated cheddar/mozzarella
1. Melt butter in a pan. Season chicken breast with salt and pepper. Sauté chicken in melted butter until nicely browned. Remove from pan.
2. Sauté sliced garlic until fragrant and add in chopped tomato. Once tomatoes are soft and mushy, add in broccoli florets, oregano and chicken seasoning.
3. Pour in cooked rice and mix thoroughly. Season with black pepper powder and a little more salt if necessary.
4. Transfer cooked rice into an oven safe baking dish. Sprinkle over grated cheese and bake at 180˚c until cheese is nicely browned.
