Chicken, Tomatoes and Olives Tray Bake

A tray bake is a quick and simple way to prepare a meal. You could use a wide variety of ingredients to create wonderful flavour combinations for your meal, the sky is the limit. And the best part is – it only uses 1 baking dish. So there will be minimal washing up to do after!

One tray feeds all!

Serves 3 - 4 people

Hearty and filling with minimal effort

Marinade the chicken in some olive oil and chopped herbs over night to intensity the chicken flavour.

Chicken, Tomatoes and Olives Tray Bake

    ½ chicken cut into 4 pieces
    1 large red pepper (cut into large chunks)
    4 ripe tomatoes (cut into wedges)
    1 red onion (cut into wedges)
    2 large potatoes (cut into thin wedges)
    ¼ cup pitted olives
    ½ tbsp. fresh thyme (chopped)
    ½ tbsp. fresh rosemary (chopped)
    ½ cube chicken stock (crumbled)
    1 tsp. paprika
    1 tsp. black pepper
    1 ½ tsp. salt
    4 tbsp. olive oil

1. Wash and cut all vegetables and herbs. Mix all of the ingredients together in a large bowl and let it sit for 15 minutes.

2. Using a wide baking dish, arrange the potatoes at the bottom of the tray together with the rest of the vegetables and juices.

3. Place the chicken on top of the vegetables. Make sure they are not stacking on top of one another, you want the chicken skins to be crispy.

4. Roast in the oven at 200 degrees for 40 minutes, or until potatoes are tender and chicken juices run clear.
