Western
Make a simple chocolate pasta (this is just normal pasta shot through with cocoa) then top it off with this heavenly spicy tomato sauce. Ooo lala!
"Marjoram gives this a superb twist!"
Ingredients
Chocolate Pasta:
2 cups flour
2 eggs
Pinch of salt
1½ Tbs cocoa powder
Sauce:
4 Tbs Olive oil
1 garlic bulb, minced
10 bird’s eye chillies, chopped
1 can diced tomatoes
10 cherry tomatoes
1 handful fresh marjoram
500g jumbo prawns
Method
Mix all pasta ingredients and knead until you get a soft dough.
Let it rest for half and hour and cut into ribbons. These go into a pot of hot water with a little bit of salt and olive oil.
In a pan, sautee garlic until fragrant then add in chillies, tomatoes and dices tomatoes.
Allow to simmer for 5 minutes and put in prawns. When prawns turn red season with salt, pepper and toss in the marjoram.
For a bit of flavour kick squeeze some lemon just before serving.
Toss pasta keeping a little of the starchy water and fold in the sauce.
