Cocoa makes a great marinade. It adds a little bitter-sweetness to meat and somehow gives a lift to spices. But we wanted to take this to the next level a devised a wicked dip for it too!
Cooking chocolate
3 cloves garlic
1 onion
1 lemon
Salt and pepper to taste

Sinful chocolate gets a savoury twist in this delicious recipe.
Requires marination for 2 hours. Use lemon grass dip in oil to brush the satay.
Method
Blend all ingredients A together.
Marinate the chicken fillets in them for 2 hours.
Before grilling tap it dry and brush with lemongrass dipped in oil.
For sauce, melt cooking chocolate on a double boiler.
Sautee chopped garlic and onion. When brown pour chocolate in.
Season with salt and pepper.
While still warm, squeeze some lemon juice.
