A mark of a great cencalok is that it stands on it’s own with a few fresh ingredients, not unlike a great belacan or budu.
Top quality cencalok is a must!
Serves 3 - 4 people
Salty, spicy and fresh best eaten as a condiment
2 tbs cencalok
3 chilli padi
1 red chilli
Juice of 1/ 2 calamansi lime (depending how you like it)
Slice chillies and shallots.
Mix everything together, and just before you serve it squeeze the lime in.
