Ironically because there is now a distinctive coffee taste to this cake, it will actually pair better with a cup of tea or a milky coffee like a latte.

Ingredients
Streusel Ingredients:
1 cup of all purpose flour (sifted)
1/3 cups brown sugar
1 tsp cinnamon
1/2 tsp salt
1/3 cup butter
1/2 tsp instant coffee
Cake Ingredients:
3 tsp of instant coffee
1 Tbs hot water
125g butter
3/4 cups of brown sugar
2 eggs
1 cup self raising flour
1/2 tsp baking powder
1/4 cup custard powder
1/3 cup milk
2 tsp vanilla essence

Method
Streusel:
Mix all the dry ingredients together.
Cut butter into squares and mix it with your fingers with the dry ingredients until it resembles rough crumbs.
Set it aside while you make the cake batter.
Cake:
Mix the coffee with hot water. Whisk butter and sugar until soft.
Whisk in vanilla and baking powder and eggs.
Don't worry if the mixture curdles at this point.
Add half of the flour, custard powder, coffee and milk and whisk for a while.
Add the rest of the flour and whisk it until you get a nice soft batter.
Pour batter into baking tin and sprinkle streusel on top until it's evenly covered (any extra streusel you can keep in the fridge for about two weeks and you can use it to sprinkle over muffins or pies).
Bake for about 30 minutes at 170C.
