Cornflake Cookies

These old-fashioned cornflake cookies are ridiculously addictive. Thankfully they are really easy to make. Be warned though, they are like popcorn. Sit with a jar in front of your favourite Raya variety show and before you know it… they are all gone…

You can finish a whole jar on your own!

Serves 3 - 4 people

You can use any other nuts for a different taste.

Cornflake Cookies

  • Total
    1 egg white
    1 tsp butter (melted)
    1 tsp vanilla essence
    1/2 cup sugar
    1/2 cup desiccated coconut
    1/2 cup almond nibs
    2 caps cornflakes (grounded coarsely)

1. Beat egg white with sugar until shinny.

2. Add in coconut, vanilla, almonds, cornflakes and butter.

3. Mix!

4. Shape them into little cookies. You can just use a small measuring cup to make them.

5. Bake for 15 minutes at 180C until they are a little crisp.
