Ikan bakar or skate is a lovely, meaty fish that takes on spices and flavour well. This simple recipe will get you grilling delicious fish in no time. Pair it with our tasty air asam for extra kick!
Meaty and full of flavour!
Serves 2 - 3 people
This fish is chunky and will please meat-lovers too. Eat with white rice and a side of greens
1 medium sized skate wing
1 stalk of lemon grass (finely chopped)
1 medium red onion
1 clove garlic
½ tsp. turmeric powder
2 tbsp. chilli paste
1 tsp. salt
1 ½ tsp. sugar
2 tbsp. cooking oil
1. Pound the lemon grass, red onion and garlic into a fine paste. Mix in the turmeric powder, chilli paste, salt and sugar.
2. Spread the marinade onto the fish and let it sit for half an hour.
3. Wrap the fish in banana leaf and grill it in a pan or over a BBQ stove till about 5 minutes each side until cooked. Serve hot with air asam.
