Remember 40 cents for a plate of noodles? Those were the days! Do you sometimes crave for your school canteen mee hoon? Simple and satisfying,  I bet some of you would sneak back to school just to eat it. OK la if you malu to go back to school just to makan, make this in your own kitchen and take a stroll down memory lane…

Never too cool for old skool

Serves 4 people

Soak mee hoon in tap water for 30 minutes or in hot water for 5 minutes. Choose your urgency.

To keep mee hoon in long strands, use tongs or chopsticks to lift and stir mee hoon around.

INGREDIENTS
    300g soaked mee hoon
    2 tbsp. oil
    2 eggs
    ½ yellow onion, sliced
    2 garlic, sliced
    1 bunch sawi, stalks and leaves separated
    1 fish cake, sliced
    2 cups chicken stock
    2 tbsp. soy sauce
    1 tbsp. dark soy sauce
    2 tsp. oyster sauce
    Pinch of salt & sugar
METHOD

1. Heat a little oil and fry egg. Cincai scramble it and take it out when it is cooked.

2. Heat the remaining oil and sauté onions and garlic until soft.

Back in the day, some of you might even spend a couple of minutes picking out the onions and garlic before you started eating

3. Pour in chicken stock, and all 3 sauces. Add in fish cakes and sawi stalks, adjust seasoning with salt and sugar. Add lah extra veggies because you are an adult now.

Last time they kedekut with the fish cakes. Now put as much as you want

4. Once the taste is balanced, add in mee hoon, sawi leaves and the egg you cooked earlier. Mix well to incorporate and cook until the liquid dries up.

This colour is exactly like the Mee Hoon from my school. I wonder if the uncle is still there

5. That's it, simple as that. Makan time!
