Oh... such a great little dish. Meaty savoury gravy, lots of goodies within and a treat to eat when you're tired from work and just want a perk-me-up in a bowl.
"Incredibly satisfying..."
Ingredients
1 kg egg noodle
½ kg beef ( with bones )
200g sweet potatoes
3 Tbs curry powder (for meat)
3-4 Tbs oil
2 cups water
Condiments and garnish:
2 tofu (fried and sliced into cubes)
½ cup fried onions
1 cup beansprouts (blanched)
2 red chillies (sliced)
2 eggs (boiled and cut into half)
1 handful spring onions (sliced)
5 limes (halved)
Serves...
4-5
This is a terrific dish to make when you're having friends over
Method
Boil sweet potato until soft and puree it.
Blend paste ingredients and fry in oil until fragrant.
Add curry powder and let it fry until it's a little dark.
To this add the beef cut into pieces. You can use fillet steaks if you can't find those with bones. Bones will of course add more flavour to the gravy.
Add water to this and let it simmer for about 5-10 minutes.
Add in potato puree and stir to thicken- about another 10 minutes. Gravy is ready.
Blanch noodles, put some into a bowl, top with garnish and pour gravy over it.
Squeeze some lime and slurp away!
