Nasi Lemak Burger

Yup, we made a nasi lemak burger once. It’s a great way to eat nasi lemak and sure to get people talking if you ever serve one of these. Cooking with the pulut rice we were able to shape the rice into buns giving it a bit of burger appeal. Think of it as our own version of yakiniku rice burger with snazzy insides.

Serves 2 people

Use ready made, jarred sambal for a convenient fix.

You can also substitute the chicken patty with beef. A rendang patty seems like a good idea...

INGREDIENTS
    1 Cup pulut rice
    Sambal tumis
    Cucumber slices
    Harboiled egg, sliced
    Ikan bilis, fried
    Chicken breast
    Cumin
    Coriander
    Paprika
    Black pepper
    Salt
METHOD

1. Cook the pulut rice as per package instructions and set aside to cool.

2. Coat chicken breast with a pinch each of cumin, coriander, paprika, black pepper and salt. Sear and cook the chicken.

3. To assemble form the pulut rice into ‘buns’. On the first bun top it with the chicken, the sambal tumis, cucumber, sliced egg and fried ikan bilis.

4. Top with the second pulut bun.
