Scallops in their half shell are an impressive sight. These are simple to bake but your guests will be asking for more. They are sweet and salty, perfect with the crisp broccoli.

Ingredients
12-16 Scallop, half shell
Soy mix:
2 Tbsp Light soy sauce
1 tsp Sesame oil
an inch Ginger, minced
1 Red chili, minced
1 cloves Garlic, minced
1 tsp Lemon juice
Handful crushed toasted almonds
Blanch:
(A pot of boiling water with a 2 pinches of salt)
1 Medium Broccoli, blanched in hot water for 15 sec
2 Medium Carrots, slice, blanched in hot water for 15 sec

Try to get the scallops in their shell to make this a beautiful dish
Be careful not to overcook the scallops
Method
Combine all the soy mix ingredients.
Arrange the scallops on a baking tray. Set the oven temp at 200C. Drizzle the soy mix onto each scallop and bake it in the oven for 7mins.
Put broccoli and carrots in the center of the plate surrounded by scallops. To finish it off, sprinkle everything with toasted almonds.
