Pandan Butter Cake

by Aida Azizuddin, on Wed, February 29, 2012

As soon as this cake was taken out of the oven, everyone in the kitchen was dying for a slice. Soft and buttery, with a lovely hint of pandan this cake is a great tea time treat!

"Buttery with a wonderful pandan flavour....."

227g butter/ 1 block
200g castor sugar
2 Tbs pandan kaya
4 large eggs
20ml pandan juice
50ml milk
½ tsp pandan paste
260g self raising flour
20ml coconut milk
1 tsp baking powder
30g desiccated coconut

Serve some for teatime and your neighbours will be begging for the recipe.

Do not over beat the mixture or you'll end up with a really dense cake. Don't be lazy, squeeze out the pandan juice from the leaves instead of using flavouring to get an authentic pandan tasting cake.

1. Cream butter and sugar until light and fluffy

2. Add eggs one at a time. Add kaya.

3. Alternate dry ingredients with wet.Mix well.

4. Lastly fold coconut milk in.

5. Put in 8 inch pan. Bake at 175 C for 50 mins

Thanks for the suggestion, Angie. We actually know someone who makes really good sugee cake. Will definitely consider it for the future.

I would love to have a step by step video lesson on how to make a really good Eurasian style Sugee cake. I cannot find one on the internet yet.

Close to event day, check this space as we will be posting parking information, maps and howto. Many people are not aware that TMCC is just beside the Telekom Malaysia's Menara Rebung tower. It's accessible via the Kerinchi LRT Station (Kelana Jaya Line)
