As soon as this cake was taken out of the oven, everyone in the kitchen was dying for a slice. Soft and buttery, with a lovely hint of pandan this cake is a great tea time treat!

Do not over beat the mixture or you'll end up with a really dense cake. Don't be lazy, squeeze out the pandan juice from the leaves instead of using flavouring to get an authentic pandan tasting cake.
Thanks for the suggestion, Angie. We actually know someone who makes really good sugee cake. Will definitely consider it for the future.

I would love to have a step by step video lesson on how to make a really good Eurasian style Sugee cake. I cannot find one on the internet yet.
