Red Velvet Cupcakes

It seems like red velvet have become everyone’s flavour of choice. These cupcakes are a definite crowd pleaser. They’re so scrumptious and popular.

Ingredients

½ C Butter
1 ¼ C All Purpose Flour
1 ½ tsp Baking Powder
1 C Sugar
1 ½ Eggs
½ Tbs Vanilla
6 ml Red Colouring
1 ½ Tbsp Warm Water
½ C Buttermilk
½ Tsp Baking Soda
½ Tsp Apple Cider Vinegar
1 Tbs Cocoa Powder

Cream Cheese Frosting

¼ C Butter
½ C Sugar
4 oz Cream Cheese
1 Tsp Vanilla

Make a batch for your kid's birthday party and see how fast it disappears.



Method

1. Cream butter with sugar.
2. Add eggs.
3. Sift all purpose flour, cocoa powder and baking powder together.
4. Alternate dry ingredients with buttermilk, vanilla, colouring and water.
5. Mix baking soda with vinegar until it starts to bubble.
6. Add soda mixture into cake batter.
7. Scoop and place it into cupcake moulds.
8. Bake for 175C for 25 mins.

For the cream cheese frosting

1. Cream butter and sugar together
2. Add in cream cheese and vanilla. Mix well.
