Most people would know this dish from a famous cartoon. Ratatouille is a traditional French dish made with plenty of vegetables. This version adds in Asian spices for a little more pizzaz. It’s easy to make and tastes delicious served with pasta or couscous.
Serves 4 people
Ratatouille is a way to use up those veggies in your fridge that might not live to see another day.
1 Red Capsicum, cut in pieces
1 Orange Capsicum, cut in pieces
1 Zucchini, rough pieces
1 Squash, rough pieces
1 Onion, roughly chopped
1 Garlic clove, roughly chopped
Chopped Tomatoes (canned or fresh) or Tomato Puree
1 tsp coriander
1 tsp cumin
1 tsp chilli powder/cayenne (optional)
1. Sautee the onion and garlic till just fragrant.
2. Add in the zucchini, squash, tomatoes, and spices and stir well to coat.
3. Cover and cook till everything softens and some of the veggies start to get mushy. Enjoy!
