Spicy Chicken Kebabs with Cucumber-Tomato Salad & Garlic Sauce

Kebabs are probably satay’s sexy second cousin. Juicy chunks of meat are skewered and grilled or BBQ-ed until slightly charred on the outside and perfectly cooked within. Try making this simple chicken version that’s spiced with cumin and paprika for a tasty light meal. Mind you, you might end up wanting to make more once you’re through with this!

Kebabs: satay's tasty foreign cousin..

Serves 3 - 4 people

Prawns or chunky fish works great too for this recipe.

If you like, you can also serve this with a side of pilaf rice.

Spicy Chicken Kebabs with Cucumber-Tomato Salad & Garlic Sauce

    For kebabs

    2 chicken breasts, cut into 1 inch chunks
    1 onion, cut into wide slivers
    1 Tsp cumin powder
    1 Tsp paprika powder
    1/2 Tsp coriander powder
    Salt and pepper to taste

    For salad:

    1 small cucumber, cut into circles
    10 cherry tomatoes, cut into halves
    1/2 onion, thinly sliced
    Oil and lemon juice
    Salt and pepper to taste

    For garlic sauce

    1/4 cup mayonnaise
    4 cloves garlic, finely minced
    Lemon juice to taste
    Salt and pepper to taste

    Skewers, as much as you need, soaked in water for 1 hour beforehand

*Pre-heat oven to 220 degrees celsius

1. For the kabobs, marinade the chicken breast chunks with all the spices for 30 minutes in the fridge.

2. Then, thread the chicken onto skewers, interspersing with the onion slives. 3 chunks to a skewer seems about okay. Do more if you want, or whatever fits onto the skewers.

3. Drizzle the skewers with oil and roast them in the oven for about 15 minutes on the highest level. Once done, take it out and let rest in a warm place.

4. For the salad, just mix the cucumbers, cherry tomatoes and onions and toss with a bit of oil and lemon juice, and seasoning.

5. For the garlic sauce, put the minced garlic in a small bowl, sprinkle with water and microwave for 30 seconds. Then, mix it into the mayonnaise with lemon juice, salt and pepper.

6. Okay you're done! Serve the kabobs with the salad and garlic sauce on the side. Toast some pita bread if you like, and have it with 'em. Enjoy!
