Have a hankering for sweet and sour fish? This is a great version and much fancier when you serve a whole fried fish instead of the fillets. We used pomfret because it crisps up beautifully...

Ingredients
2 Medium bawal putih
4 Tbsp Corn flour
Seasoning Salt
Enough Oil, to deep fry
Sweet and Sour Sauce
Sautee:
1 Medium Capsicum, green, cut into squares
1 Medium Capsicum, red, cut into squares
1 Medium Capsicum, yellow, cut into squares
1 Large Onion, cut into squares
4 cloves Garlic. chopped
2 Inch Ginger, thinly slice
Handful Spring onion, cut into 2 inch length
Handful Chinese parsley
Sauce:
1 Tbsp Oyster sauce
6 Tbsp Tomato ketchup
4 Tbsp Chilli sauce
2 Tbsp Lemon juice
1/2 Cup Water

This goes perfectly with hot steamed rice and is so easy to do
Make sure the fish is fried till crisp and drain well
Method
1. Season the fish with salt and coat it with corn flour. Deep fry the fish till golden brown.
2. Sautée garlic, onion and ginger together till fragrant.
3. Add in the rest of the ingredients that have been previously sautéed. Next pour in all the gravy ingredients. Stir well then switch off flame.
4. Arrange the deep fried fish onto a serving plate. Pour the gravy onto the fish just before serving.
