This is a wonderful mellow dish. You just boil everything up gently with no need for oil or sautéing.
Serves 4 people
Get your plate of rice ready because once you get a taste of this, you'll be craving for more.
1 ½ liter water
1 small pumpkin
2 inches fresh turmeric
2 bird’s eye chillies
¼ cup dried anchovies
1 dozen tiger prawns
1 cup long beans
1 turmeric leaf
125 ml coconut milk
Salt to taste
Chop pumpkin into chunks. Put in pot with water and bring to a boil.
Pound shallots, fresh turmeric, chillies and anchovies into a rough paste.
Once the pumpkin is about 2/3 cooked, put in paste and some salt.
Let it simmer gently.
Add in turmeric leaves, prawns and French beans.
Turn stove low and slowly pour in coconut milk, stirring constantly.
Adjust taste with more salt if necessary.
