Kuih Cara Berlauk

Kuih Cara Berlauk is a griddled bite-sized kuih topped with curried beef mince, chillies and fried shallots. The yellow colour comes from a little turmeric mixed in with the batter. It’s a delicious savoury cousin to Kuih Cara (pandan-flavoured with sugary centre). Sold in most kuih stalls for tea time, it is a great snack to carry you on till dinner time.

Ingredients

Batter
80g flour
Pinch of salt
⅛ tsp. turmeric powder
80ml coconut milk
80ml water
1 egg, beaten

Curried Beef
1 tbsp. oil
3 shallots, minced
80g beef mince
1½ tsp. meat curry powder
½ tsp. salt
¼ tsp. sugar

Garnish
Chopped red chillies
Fried shallots


Method

1.Weigh out flour into a mixing bowl. Add in salt and turmeric powder. Mix well.

2.Pour in coconut milk and water. Whisk until there are no lumps and crack in egg. Give it one final mix and pour into a small jug. Set it aside.

3.To make beef filling, heat up oil and fry shallots until golden brown. Add in beef mince, curry powder, salt and sugar. Fry until beef is cooked. Set aside.

4.To make kuih, start by heating Kuih Cara mould over medium low heat and grease it with a little oil.

5.Once mould is hot, pour in batter until ¾ full. Put a small teaspoon of cooked beef mince into the center. Cover with a lid and cook, about a minute.

6.Remove lid and garnish with chopped chillies and fried shallots. Cover again and cook for 30 more seconds.

7.Once cooked, remove Kuih Cara from the mould with a skewer or a knife.

8.Best served hot.
