Steamed Fish with Taucu

Taucu (fermented soybean paste) goes beautifully with a freshly steamed fish. They seemed to be an abundance of pomfrets lately in the market and get this fish fresh, it’s firm, white flesh is a real treat! We really think nothing beats a well steamed fish if you are looking for something a little healthier for dinner…

Ingredients

1 whole fish, washed and cleaned (we used pomfret or bawal putih)
2 red chillies, deseeded and sliced thinly
2 Tbs taucu
4 cloves garlic, thinly sliced
1 red onion, sliced
1 Tbs light soy sauce
1 inch ginger, sliced into matchsticks
1 tsp sugar
1/4 tsp white pepper
2 spring onions, thinly sliced


Method

1. Set up steaming pot and steam fish with ginger slices for 6 minutes.

2. While waiting for fish to steam, heat up oil on pan and stir fry garlic, chilies and onions until fragrant.

3. Add in fermented soybean paste, white pepper and light soy sauce. Stir fry for another 30 second on low heat and add in sugar. Set aside.

4. After 6 minutes, spread the stir-fried fermented soybean mixture onto the fish and put some underneath the fish as well.

5. Continue steaming for another 6 minutes.

6. Serve and garnish the fish with sliced spring onions. Serve with some white rice.
