1. First, sprinkle the sugar in a hot pan and let it caramelize, about 2 minutes. Add in the shallots and a bit of water. Cook until soft and browned. Set aside.
2. In a bowl, gently mix the lamb, chilli flakes and mint leaves. Form two patties and cook them in a hot pan for 3 minutes each side, or until deeply browned. Keep warm.
3. Toast the buns with some oil or butter then assemble the burgers: bun, arugula, patty, onions, feta cheese, bun.
4. Eat with gusto. Say 'ROLL OUT!'
