Everybody knows that the best mamak mee rebus and mee goreng is in Penang. The question is where in Penang can you find it? Let me tell you about a hawker stall just off Jalan Burmah in Penang. They've been there for more than ten years and their mee rebus and mee goreng is to die for!
This hawker stall is called Mee Sultan 'Pasembur Special' as displayed in front of the stall and located just off Jalan Burmah (at Jalan Swatow if I'm not mistaken) along with all the other hawker stalls serving killer popiah, wan tan mee and others. Let me tell you about the mee rebus.
I like the gravy. It's made of prawn stock. The secret to this really good Penang Mee rebus stock is that prawns are added together with the skin. The mixture is then blended to give it a smoother texture. Together with lentils, chillies, potatoes and other secret ingredients, this fiery red gravy can be graded as class A1. Mee Sultan comes with the usual tauhu, sliced boiled potatoes, delicious slices of beef and squid. These ingredients make the mee even more delicious especially the sliced beef. It's slow cooked in beef stock and it's very soft.
"They add mee rebus gravy to the noodles"
The mee goreng shares the same set of praises too. Sultan’s fried mee is not prepared dry. Theirs are a bit wet due to the addition of some mee rebus gravy which is then fried with chillies, onions, garlic, eggs, slices of beef and squid. With the addition of tomato sauce, it gives this dish a slightly different twist in taste to the mee rebus but equally it is good. In this dish, I like the way Sultan prepares their mee wet. It gives the dish a richer taste with more kick than dry ones.
To get to Mee Sultan is pretty easy. You need to find your way to Jalan Burmah and off one of its roads you can see mushrooms of hawker umbrellas which start opening as early as noon till the wee hours of the morning. Mee Sultan is located slap bang at a T-junction at this 'off Jalan Burmah' road. If you get lost, just ask around. Mee Sultan is very famous so you can bet someone will be able to direct you to the mee.

The king of noodles, hail Mee Sultan!
Dont be disappointed if you went to Swatow Lane and find that Mee Sultan is no longer there. The other famous hawkers of ice kacang, curry mee have all been moved to the new food court, just on the opposite side of the Swatow lane road. the new food court is parallel to where their old location is.
However during my recent trip there 16-18 Jan 2008, I find that the Mee Sultan at this new food court is not as well fried. The new cook who is much younger, does not fry it "basah" or moist as did the older mamak cook. It came rather dry and tak ada kick.
If you yearn for the fried Mee Sultan slightly moist (basah), there is a restaurant (shoplot) just 2 lanes away from Swatow lane. Specifically, the lane behind Giant. there is a very clear green signboard MEE SULTAN, and the style of frying is the same and equally yummy. I had mine fried with sotong, i usually prefer "kelempong" or lungs but they didnt have that. At least my trip to Penang this time was fulfilled with the true Mee Sultan.
